homemade granola


Let's explore the healthy side of things before I lose myself in Christmas cookie recepies. I can't be the only one who absolutely hates the cold but lives for anything Christmas related.
Ok, take a deep breath. It's not December yet and therefore I am not allowed to talk about the best holiday of the year.
Focus! Healthy. Things that are good for you. Breakfast. Granola! Can anyone tell me why the cereal you can buy is always covered in sugar? Don't get me wrong, I do like things sweet but sugar as second or sometimes even first ingredient just annoys me. I am trying to - at least sometimes - eat healthy. So instead of reaching for bread with whatever every day I'll have granola with fruit and yoghurt for breakfast. But I haven't found one that doesn't seem to be covered in sweetener. Sometimes there is no sugar at all but then I feel like it tastes like nothing. In the end I decided to consult Pinterest. I almost got lost in ingredients I have never heard of and have no idea where to find but which are supposed to be oh so very healthy and good for you.

I went to one of those fancy supermarkets that carry nothing but organic food to try some things with interesting names and this is what I ended up with:


 Ingredients

  • 150g oat flakes
  • 150g spelt flakes
  • 50g ground hazelnuts
  • 15g chuffed amaranth
  • 30g flaxseed
  • 50g chuffed quinoa
  • 50g chopped walnuts
  • 50g Brazil nut
  • 5 Tablespoons of coconut oil
  • 3 Tablespoons of maple syrup
  • 3 Tablespoons of honey
  • cinnamon
For everyone that is scared of measurements in gram don't be! Just get a scale. It's the easiest thing in the world. Trust me!

Instructions

Put everything in a bowl and mix until you feel like your wet ingredients have spread evenly over the dry ones. I put maple syrup in first and felt like I could barely taste it so I added honey to sweeten everything some more. How much you use is completely up to your liking. By the way I switched from maple syrup to honey because I simply ran out of it...
I am a huge fan of cinnamon so I added a whole lot. Just use whatever you like to sweeten and season. The list is endless: dried fruit, nuts, coconut flakes, chocolate flakes, agave syrup, honey, etc.
Preheat your oven at 180°C (about 360°F). Spread everything on a baking sheet and bake for about 20 minutes. Make sure to stir the mix up once in a while, about every 5-7 minutes, to make sure everything is baked evenly. I found it very hard to decide whether the granola was done. In the end I think I over baked it a little at 25 minutes. I would say it is better to under bake than to over bake. It's not like you couldn't eat it "raw"..
When you feel like your granola got some color, let it cool and put it into a nice jar or an ugly jar or whatever you have on hand. I used two old jam jars I found in my pantry.
Now it's time to try your creation. Again use whatever you like. I personally am not a fan of milk on my granola. Usually I go with yoghurt and fresh fruit. But again you do you!
